Tuscan Recipes - No.7 Cenci

This sweet is made with fried dough and covered with powdered sugar. In Tuscan, cenci means ‘rags’ because that’s exactly what they look like. They’re thin and cut into different rectangular shapes. Cenci are golden, crispy, light and easy to prepare.


INGREDIENTS


  • 300 g of flour
  • 2 eggs
  • 100 g of sugar
  • 3 tablespoons olive oil
  • powdered sugar
  • oil for frying
1.     Add oil and sugar to the eggs after they’ve been beaten. Stir well in order to thoroughly mix the ingredients; work the dough until it becomes very soft and smooth. Roll it out so that the dough is a few millimeters thick.
2.     With a pastry wheel, cut the dough into long, narrow rectangles. Heat the oil in a frying pan and when it’s hot, add the rectangles of dough.
3. When they puff up and become golden brown, drain them on paper towels to absorb any excess oil. Finally, sprinkle them with powdered sugar and enjoy!
